sauces

there comes a point when food creation needs to go beyond that of merely choices in seasoning, heat, and accompaniment choices. to create new depth in flavors, one must eventually delve into the realm of sauces.

the only real sauce experience i have is creating some basic curry sauces out of curry paste and the occasional cream of mushroom based sauce. i'm never completely satisfied with how those turn out, and neither do i know how to adjust them to get them closer to what i want, and those sauces are dumb simple compared to the sort of sauces i want to be able to make.

part of my difficulty is that as a food critic/taster/analyser there's still too much that i don't know how to identify. With simple stir-frys or pressure-cooking or basic baking where the application of seasoning is more direct, no problems. But sauces can have such a rich complexity, a flavor that changes moment to moment in the tasting experience. i know what i like and how to describe it, but i can't always identify what contributes to it or how to duplicate it.

a part of me wonders if it's time to change that. pick a sauce, make it a few times, experiment with it and try to hone in on what subtle differences i put into the components make for a different end result.

the only issue then is what sauce to pick.

cream sauces are yummy, but i feel a cop out because they sound easier. it would be neat to try something like a chipotle sauce, something to put over chicken. other than that - i don't even know. even my exposure to sauces is limited, you know?

I SO FRIGGIN' AGREE

sauce from scratch is like soup from scratch...utterly complex and mysterious and seductive to me!

and yeah cream sauces might be easier the only two I could think of off the top of my head thinking at this post were simple, tasty cream-based ones. That and pesto, if that counts as a sauce.

i can only take so much pesto in a given time period, so trying to hone something like that may not be the best choice. :)
